Description

Cracker made from amaranth flour, arabic gum and oil extract based on spicy-aromatic raw materials of fenugreek leaves

Novelty

The novelty of scientific development lies in the use of non-traditional plant raw materials, namely amaranth flour and arabic gum, to increase the nutritional and biological value

An oil extract based on spicy and aromatic raw materials of fenugreek monarda leaves was developed for applying it on the outer surface of the cracker after heat treatment in order to extend the shelf life and improve organoleptic indicators

Advantages

Compared to a conventional cracker, the developed cracker has an increased nutritional and biological value, an increased content of essential amino-acids, dietary fiber, vitamins, minerals, has an extended shelf life of up to 12 months, an original spicy-aromatic taste and aroma

Outlook

The development can be implemented at enterprises of the bakery and confectionery industry that produce flour confectionery products, low-power workshops, bakeries
