Description

Cracker made with the use of unconventional spicy-aromatic raw materials of scarlet monarda leaves, oil extract based on them and a technological improver

Novelty

For the first time, it is proposed to add spicy-aromatic raw materials of scarlet monarda leaves, which has high antioxidant properties, a pleasant spicy-aromatic taste and aroma in the cracker production technology; an oil extract based on the leaves was developed to apply it on the outer surface of the cracker after heat treatment in order to extend the shelf life and improve organoleptic indicators

Advantages

Compared to a conventional cracker, the developed cracker has an increased content of biologically active substances, an extended shelf life of up to 12 months, an original spicy-aromatic taste and aroma, improved structural and mechanical properties due to the addition of the technological improver L-cysteine, which will expand the range of flour confectionery products

Outlook

The development can be implemented at enterprises of the bakery and confectionery industry that produce flour confectionery products, low-power workshops, bakeries
